Raspberry Oatmeal Bars Recipe
My mom introduced me to this amazing recipe! She found it on the back of Bob’s Red Mill Whole Grain Oat Flour and we have been hooked ever since. It can be made gluten free and it’s a healthy (somewhat) dessert. It’s also super easy and quick, but tastes like it took you forever to make 🙂

Ingredients:
1 stick Unsalted Butter
2 tsp. pure Vanilla Extract
1 cup Oat Flour
1 cup Rolled Oats
1/2 cup Sugar
1 tsp. Baking Powder
1 tsp. grated Lemon or Orange Zest
1/2 tsp. Sea Salt
2/3 cup Raspberry Preserves (I LOVE Bonne Maman Raspberry Preserves, there is nothing like it)
The original recipe calls for Xanthan Gum, but we decided not to add this ingredient. Xanthan Gum is used to thicken and bind, but we did not find it changed the bars when made without it!
Directions:
Preheat oven to 375 degrees. Generously grease 8×8 pan. In a medium bowl, combine melted butter, and 1 teaspoon of the vanilla. Stir in the flour, oats, sugar, baking powder, lemon/orange zest, and salt until thoroughly blended. Press 1 cup of oat mixture firmly on bottom of pan. Stir remaining teaspoon of vanilla into raspberry preserves then spread evenly on top. Sprinkle remaining oat mixture over preserves then pat firmly to make top layer smooth and even. Bake or 20-25 minutes or until the top is lightly browned. Cool for 30 minutes and then enjoy!
